Whipped Feta Prawn Dip with Lemon Pine Nuts and Parsley

¼ cup ricotta
1 cup roughly crumbled feta
2 tablespoons extra virgin olive oil
¼ teaspoon chilli flakes
½ tablespoon chopped fresh dill
½ tablespoon chopped fresh Italian parsley
½ tablespoon finely grated lemon rind
1 tablespoon roasted pine nuts roughly chopped
24 large cooked Australian Prawns

Place the ricotta, feta and olive oil in a food processor. Blend until smooth. Spoon into a bowl drizzle with extra olive oil. Top with dill, parsley, pine nuts, lemon zest and red pepper flakes (optional)
