Work from home lunch. Open prawn sandwich with chilli mayo, pesto and cucumber.
4 thick slices sourdough bread, toasted
1 butter lettuce, leaves separated and rinsed
2 Lebanese cucumber, cut into ribbons
24 cooked Australian prawns, peeled and deveined
Store-bought pesto and baby basil to serve
2 tablespoons sriracha
½ cup mayonnaise
1 tablespoon lime juice
To make the chilli mayonnaise: place the sriracha, mayonnaise and lime juice in a bowl and mix to combine.
Spread chilli mayo generously over the toasted sourdough. Top with lettuce, cucumber and prawns. Drizzle with pesto and sprinkle with baby basil to serve.
